Description

A healthier twist on the classic Italian Eggplant Parmesan, made crispy in an air fryer with delicious marinara and melted cheese.


Ingredients

  • 1 large eggplant or two small
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 2/3 cup seasoned bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1 cup marinara sauce, plus additional for serving
  • 1 cup shredded mozzarella cheese
  • Thinly sliced fresh basil leaves or chopped fresh parsley for garnish (optional)


Instructions

  1. Preheat the air fryer to 380°F.
  2. Slice the eggplant into 1/2-inch slices and dry them with a paper towel.
  3. In a medium bowl, mix the bread crumbs, Parmesan cheese, Italian seasoning, and garlic powder.
  4. Place the flour in another bowl and whisk the eggs in a separate bowl.
  5. Dip each slice of eggplant in the flour, then the egg, and finally into the bread crumb mixture.
  6. Spray each side of the eggplant with cooking spray and place them in a single layer in the air fryer basket.
  7. Cook for 5 minutes, then flip the slices over and cook for another 4-5 minutes.
  8. Place marinara sauce and shredded cheese on top and cook for 2-3 minutes or until the cheese melts.
  9. Garnish with fresh parsley or basil and serve with additional sauce if desired.
  10. Store leftovers in the fridge in a covered container for up to 3 days, or in the freezer for up to a month. Reheat in the air fryer or under the broiler.

Notes

Make sure to slice your eggplant evenly for uniform cooking. Adjust the seasoning in the bread crumb mix to suit your taste.
