Description
A delightful dish of crispy breaded chicken topped with rich marinara sauce and gooey melted cheese, perfect for family dinners or special occasions.
Ingredients
- 3 chicken breasts, sliced in half length-wise to create 6 cutlets
- 1/2 cup all-purpose flour
- 3 eggs, whisked
- 1/3 cup olive oil
- 1 1/2 cups breadcrumbs
- 1/2 cup parmesan cheese, shredded
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp Italian herb blend (thyme, oregano, basil, rosemary)
- 1 tsp garlic powder
- 6 slices Mozzarella
- 1 1/2 cups marinara sauce
- 1/3 cup parmesan cheese, shredded
- 2 tbsp fresh basil, chopped
Instructions
- Preheat your oven to 425°F (220°C). Tenderize the chicken and pat it dry.
- In a shallow dish, mix the breadcrumbs with the parmesan cheese, salt, pepper, Italian herbs, and garlic powder. Set up an assembly line with flour, whisked eggs, and the breadcrumb mixture.
- Bread the chicken by coating each cutlet in flour first, then dipping it in the eggs, and finally packing it with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat. Brown the chicken for about 2-3 minutes on each side until golden.
- Arrange browned chicken in a baking dish. Top each piece with a slice of mozzarella cheese and a spoonful of marinara sauce.
- Bake uncovered in the preheated oven for about 14 minutes. Sprinkle with additional parmesan cheese and broil on HIGH for 1 minute until bubbly and slightly browned.
- Garnish with fresh basil before serving.
Notes
For a baked method, you can bake at 450°F (232°C) for 25 minutes, layer as directed, and bake for an additional 5 minutes.
