Description

A creamy and savory spinach artichoke dip made effortlessly in a slow cooker, perfect for gatherings and parties.


Ingredients

  • 8 oz Cream Cheese, softened and cubed
  • 1 cup Sour Cream
  • 1/4 cup Mayonnaise
  • 2 cloves Garlic, minced
  • 10 oz Frozen Chopped Spinach, thawed and squeezed very dry
  • 14 oz Canned Artichoke Hearts, drained and chopped
  • 1/2 cup Diced Onion (optional, for texture)
  • 1 cup Mozzarella Cheese, shredded
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • A pinch of red pepper flakes (optional, for heat)


Instructions

  1. Prepare the spinach by squeezing out all excess water to avoid a watery dip.
  2. Lightly grease the inside of a slow cooker to prevent sticking.
  3. Add the cubed cream cheese, sour cream, mayonnaise, minced garlic, chopped artichokes, and dried spinach into the cooker.
  4. Stir in the mozzarella, Parmesan, salt, and pepper.
  5. Cover the crock pot and cook on LOW for 2 hours or on HIGH for 1 hour.
  6. Once done, stir to combine everything into a smooth, creamy dip. Adjust the consistency with milk if necessary.
  7. Keep on the WARM setting for serving and garnish as desired.

Notes

Squeeze out all water from the spinach for thick dip; can add more cheese and spices to taste. For variation, swap artichokes for roasted red peppers or use different cheeses.
