Ingredients
- 4 Boneless Chicken Breasts
- Salt and Black Pepper (to taste)
- 3 tbsp Olive Oil
- 2 cloves Garlic (grated)
- 3/4 cup Chicken Broth
- 2/3 cup Heavy Cream
- 1 tsp Dried Thyme
- 1/2 tsp Dried Oregano
- 1/3 tsp Chili Flakes
- 1/3 cup Parmesan (grated)
- 1/4 cup Basil (fresh, chopped)
- 1/2 cup Sun Dried Tomatoes (chopped)
Instructions
- Pat dry the chicken breasts with paper towels and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and add chicken, cooking for 8-10 minutes per side until golden brown.
- Remove chicken from the skillet and set aside on a warm plate.
- Add a splash of the dried tomato oil to the skillet, sauté grated garlic until golden brown.
- Add heavy cream, chicken broth, chopped sun-dried tomatoes, basil, thyme, oregano, Parmesan, and chili flakes. Mix well.
- Fold chicken into the sauce, cover, and simmer for about 10 minutes until cooked through.
Notes
Pairs beautifully with mashed potatoes or a side salad. For best results, allow the chicken to rest before slicing.
