Description

A creamy pasta dish with tender chicken and sun-dried tomatoes, perfect for weeknight dinners.


Ingredients

  • 225 g dry pasta (penne, fettuccine, or your choice)
  • 1 tablespoon olive oil
  • 1/2 cup finely chopped onions
  • 3–4 cloves garlic, minced
  • 1 tablespoon butter
  • 450 g chopped chicken breasts
  • 1/2 teaspoon each: Italian seasoning, smoked paprika, salt, garlic powder, and pepper
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes
  • Fresh basil for garnish


Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, reserving 1/2 cup of pasta water, then drain and keep in a bowl.
  2. Heat olive oil in an oven-safe skillet over medium heat. Add onions and cook for 2–3 minutes until soft. Add butter and minced garlic; cook for an additional 30 seconds until fragrant. In a bowl, mix chicken with spices and cook for 5–6 minutes until golden.
  3. Pour in heavy cream and reserved pasta water, stirring in Parmesan cheese and sun-dried tomatoes. Let simmer for 3–4 minutes until it thickens slightly.
  4. Add the cooked pasta to the sauce and toss to coat well. Serve hot, garnished with fresh basil.

Notes

Do not overcook the pasta; save pasta water for adjusting sauce consistency. Fresh grated Parmesan enhances flavor.
