Description

A creamy and flavorful pasta dish featuring chicken, tomatoes, and spinach, perfect for a weeknight dinner or a romantic date night.


Ingredients

  • 2 Chicken breasts
  • 8 oz Pasta of choice
  • 1 cup Double cream or cottage cheese
  • 2 cups Baby spinach
  • 1 cup Passata
  • 1 cup Tomato and thyme sauce
  • 1 cup Heavy cream or crème fraîche
  • 1 cup Mushrooms, sliced
  • 1 Capsicum, chopped
  • 100g Pancetta or bacon
  • 1/2 cup Parmesan cheese, grated
  • 3 Garlic cloves, minced
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add chicken breast and cook until browned and cooked through.
  4. If using pancetta or bacon, add it now and cook until crispy.
  5. Stir in mushrooms and capsicum, cooking until softened.
  6. Add Passata and tomato and thyme sauce to the skillet, stirring to combine.
  7. For a creamier sauce, add double cream or cottage cheese and mix well.
  8. Stir in baby spinach and let it wilt.
  9. Combine the pasta with the sauce, mixing well.
  10. Season with salt and pepper to taste.
  11. Serve topped with grated Parmesan cheese.

Notes

Cool the pasta to room temperature before storing. It can be kept in an airtight container in the fridge for 3 to 4 days. If the sauce thickens during storage, add a splash of cream or water when reheating.
