Description
A creamy and flavorful pasta dish featuring chicken, tomatoes, and spinach, perfect for a weeknight dinner or a romantic date night.
Ingredients
- 2 Chicken breasts
- 8 oz Pasta of choice
- 1 cup Double cream or cottage cheese
- 2 cups Baby spinach
- 1 cup Passata
- 1 cup Tomato and thyme sauce
- 1 cup Heavy cream or crème fraîche
- 1 cup Mushrooms, sliced
- 1 Capsicum, chopped
- 100g Pancetta or bacon
- 1/2 cup Parmesan cheese, grated
- 3 Garlic cloves, minced
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add chicken breast and cook until browned and cooked through.
- If using pancetta or bacon, add it now and cook until crispy.
- Stir in mushrooms and capsicum, cooking until softened.
- Add Passata and tomato and thyme sauce to the skillet, stirring to combine.
- For a creamier sauce, add double cream or cottage cheese and mix well.
- Stir in baby spinach and let it wilt.
- Combine the pasta with the sauce, mixing well.
- Season with salt and pepper to taste.
- Serve topped with grated Parmesan cheese.
Notes
Cool the pasta to room temperature before storing. It can be kept in an airtight container in the fridge for 3 to 4 days. If the sauce thickens during storage, add a splash of cream or water when reheating.
