A rich, creamy chicken dish that cooks quickly for a cozy weeknight meal.
Ingredients
- 4 Boneless skinless chicken breasts or thighs
- 4 cloves Garlic, minced
- ½ cup Sun-dried tomatoes, chopped
- ½ cup Parmesan cheese, grated
- 1 cup Cream
Instructions
- Pat the chicken dry and season lightly with salt and pepper.
- If cooking on the hob, brown the chicken in a little oil for 2–3 minutes each side to give color. Remove and set aside.
- In the same pan, add chopped garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
- Add cream and grated Parmesan. Stir and bring the sauce to a gentle simmer.
- Return chicken to the sauce. Cover and cook until the chicken is done and the sauce thickens.
- For the slow cooker, combine chicken with garlic, sun-dried tomatoes, parmesan, and cream. Cook slowly until the chicken is tender and juicy.
- For oven baking, cover and bake chicken and sauce at 180°C (350°F) for around 40 minutes, ensuring the chicken is properly cooked before serving.
Notes
Serve over pasta, rice, or with crusty bread. Add salad or veggies for freshness.
