Description

A creamy and flavorful dip perfect for parties and gatherings, made with sweet corn and zesty spices.


Ingredients

  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream (or Mexican Crema)
  • 2 Tbsp Fresh Lime Juice
  • 1 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 2 cans (11 oz each) Mexican-Style Corn, drained
  • 1 cup Feta Cheese or Cotija Cheese, crumbled
  • 1/4 cup Fresh Cilantro, chopped
  • 2 Green Onions, thinly sliced
  • 1 Jalapeño, seeded and finely diced (optional)


Instructions

  1. In a large mixing bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and garlic powder until smooth.
  2. Drain the canned corn well and pat dry if necessary.
  3. Add the corn, cheese, cilantro, green onions, and jalapeño to the bowl with the creamy base and mix until coated.
  4. Cover with plastic wrap and refrigerate for 30 minutes to 1 hour.
  5. Before serving, give it a final stir, garnish with chili powder, cilantro, and a wedge of lime.
  6. Serve chilled with tortilla chips or corn chips.

Notes

For a spicier kick, leave the seeds in the jalapeño or add more chili powder. Allow the dip to chill for at least 30 minutes to let the flavors blend nicely.
