A creamy and flavorful dip perfect for parties and gatherings, made with sweet corn and zesty spices.
Ingredients
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream (or Mexican Crema)
- 2 Tbsp Fresh Lime Juice
- 1 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- 2 cans (11 oz each) Mexican-Style Corn, drained
- 1 cup Feta Cheese or Cotija Cheese, crumbled
- 1/4 cup Fresh Cilantro, chopped
- 2 Green Onions, thinly sliced
- 1 Jalapeño, seeded and finely diced (optional)
Instructions
- In a large mixing bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and garlic powder until smooth.
- Drain the canned corn well and pat dry if necessary.
- Add the corn, cheese, cilantro, green onions, and jalapeño to the bowl with the creamy base and mix until coated.
- Cover with plastic wrap and refrigerate for 30 minutes to 1 hour.
- Before serving, give it a final stir, garnish with chili powder, cilantro, and a wedge of lime.
- Serve chilled with tortilla chips or corn chips.
Notes
For a spicier kick, leave the seeds in the jalapeño or add more chili powder. Allow the dip to chill for at least 30 minutes to let the flavors blend nicely.
