Description
A delicious twist on a classic dish, combining nuttiness of cauliflower with the spicy kick of pepper jack cheese.
Ingredients
- 3 pounds cauliflower, cut into florets
- Salt for boiling the cauliflower
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 8 ounces pepper jack cheese, shredded by hand, divided
Instructions
- Preheat your oven to 350 degrees F.
- Bring a pot of salted water to a boil.
- Add the cauliflower and cook until tender but firm, about 5 to 6 minutes. Drain well.
- To make the cheese sauce, place 2 tablespoons of butter in a small saucepan over medium-low heat.
- When the butter has melted, add the flour. Cook for 1 to 2 minutes, stirring or whisking constantly.
- Slowly add the milk while whisking to thicken the sauce.
- Once all the milk has been added, stir in 4 ounces of pepper jack cheese until melted.
- Place the boiled cauliflower in a large casserole dish. Pour the cheese sauce over the cauliflower.
- Sprinkle the remaining 4 ounces of cheese on top.
- Bake in the preheated oven for 15 minutes, until the cheese is lightly browned.
Notes
Use freshly shredded cheese for better melting texture and flavor. Consider adding garlic powder for extra flavor.
