A quick and hearty potato soup made from canned potatoes, perfect for busy weeknights.
Ingredients
- 1 can (15 ounces) of canned potatoes
- 1 cup broth or water
- 2 tablespoons butter (optional)
- 1 cup milk (whole or skim)
- Salt, to taste
- Pepper, to taste
- 1/2 teaspoon garlic powder (optional)
- Your choice of toppings: shredded cheddar cheese, crispy bacon bits, sliced green onions, sour cream
Instructions
- Drain and rinse the canned potatoes.
- Plop them into a medium saucepan with broth or water.
- If desired, add butter for richness.
- Bring to a simmer and mash the potatoes with a potato masher until desired consistency.
- Pour in the milk and season with salt, pepper, and garlic powder.
- Stir well and simmer for another few minutes to heat through.
- Taste and adjust seasoning as necessary.
- Serve hot with your favorite toppings.
