Delicious Shamrock Sugar Cookies perfect for St. Patrick’s Day celebrations, with sweet frosting and festive shapes.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/4 cups powdered sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract (optional)
- 2 cups powdered sugar (for frosting)
- 1/2 cup unsalted butter, softened (for frosting)
- 2 teaspoons vanilla extract (for frosting)
- 3 to 4 tablespoons milk (for frosting)
- Green food coloring (for frosting)
- Green sanding sugar (for decoration)
Instructions
- Combine all cookie ingredients in a stand mixer bowl or a large mixing bowl. Mix on low until a dough forms.
- Divide the dough in half. Roll each half between two sheets of wax paper to about 1/4 inch thick. Chill in the refrigerator for at least 30 minutes.
- Preheat the oven to 375 degrees F. Cut cookies into desired shapes and place them on a lined baking sheet.
- Bake for 6 to 10 minutes, until the bottoms just start to brown. Cool completely.
- For the frosting, beat the softened butter until smooth. Then add powdered sugar, vanilla, and milk until you reach your desired consistency. Tint the frosting green.
- Frost the cookies and dip them in sanding sugar for decoration.
- Store cookies in an airtight container for up to 3 days, or freeze them unfrosted.
Notes
Make sure your butter is softened to room temperature for easier mixing. Chilling the dough helps prevent the cookies from spreading too much while baking.
