Description

Delicious Shamrock Sugar Cookies perfect for St. Patrick’s Day celebrations, with sweet frosting and festive shapes.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/4 cups powdered sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract (optional)
  • 2 cups powdered sugar (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 teaspoons vanilla extract (for frosting)
  • 3 to 4 tablespoons milk (for frosting)
  • Green food coloring (for frosting)
  • Green sanding sugar (for decoration)


Instructions

  1. Combine all cookie ingredients in a stand mixer bowl or a large mixing bowl. Mix on low until a dough forms.
  2. Divide the dough in half. Roll each half between two sheets of wax paper to about 1/4 inch thick. Chill in the refrigerator for at least 30 minutes.
  3. Preheat the oven to 375 degrees F. Cut cookies into desired shapes and place them on a lined baking sheet.
  4. Bake for 6 to 10 minutes, until the bottoms just start to brown. Cool completely.
  5. For the frosting, beat the softened butter until smooth. Then add powdered sugar, vanilla, and milk until you reach your desired consistency. Tint the frosting green.
  6. Frost the cookies and dip them in sanding sugar for decoration.
  7. Store cookies in an airtight container for up to 3 days, or freeze them unfrosted.

Notes

Make sure your butter is softened to room temperature for easier mixing. Chilling the dough helps prevent the cookies from spreading too much while baking.
