Spinach and Feta Brownies

Description

Savory brownies made with spinach and three types of cheese, perfect for a quick light meal or snack.


Ingredients

  • 2 tsp olive oil
  • 4 scallions, diced
  • 10 oz baby spinach, rough chop
  • 2 tbs dill, chopped
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup milk, of choice
  • 2 eggs, lightly beaten
  • 1/4 cup butter, melted, or olive oil
  • 4 oz shredded mozzarella
  • 4 oz feta cheese, crumbled
  • 2 tbs grated parmesan cheese


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a medium-sized baking dish with olive oil.
  2. In a large, deep pan, heat 1 tsp of olive oil on medium. Cook the scallions until they soften, about 1-2 minutes.
  3. Add half the spinach and sauté until mostly wilted, seasoning with salt and pepper. Remove to a colander to drain and pat dry with paper towels.
  4. Add the remaining oil to your pan and repeat the process with the remaining spinach.
  5. In a large bowl, whisk together the flour, baking powder, and salt. Add the milk, eggs, and melted butter, then mix.
  6. Fold in the spinach mixture, dill, mozzarella, and feta until just combined.
  7. Transfer to your baking dish and spread evenly. Sprinkle with grated Parmesan.
  8. Bake for 40-45 minutes or until the top is golden brown. Allow to cool for 15 minutes prior to slicing.

Notes

Squeeze or pat the cooked spinach to remove extra moisture. Store leftovers in an airtight container in the fridge for up to 4 days.
