Description
Festive and colorful clover-shaped cookies, perfect for celebrating St. Patrick’s Day.
Ingredients
- 3/4 cup salted butter, room temperature
- 1/3 cup brown sugar, packed
- 1/3 cup sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1/4 teaspoon kosher sea salt
- 1/4 teaspoon green gel food coloring
- 1 egg white
- 1 tablespoon water
- 1/4 cup rainbow nonpareil sprinkles
Instructions
- In a stand mixer bowl, beat the butter and sugars until light and fluffy. Add the egg, vanilla, and almond extract, mixing until combined.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Divide the dough into two balls. Wrap one in plastic wrap and set aside. Fold green food coloring into the other ball until uniform, flatten it into a disk, wrap it, and chill for 3 hours.
- Using a clover-shaped cutter, cut out clovers from the green dough, re-rolling as needed.
- Whisk the egg white and water in a small bowl, then brush it over the clovers. Stack the clovers into a tower, wrap in plastic, and freeze for 30 minutes.
- Break the other dough ball into pieces, roll them into ropes, and encase the chilled clovers completely. Brush with egg wash, roll in sprinkles, and freeze again for 30 minutes.
- Preheat the oven to 375°F. Slice the log into 1/4-inch thick slices and bake on a lined baking sheet for 10-12 minutes. Allow to cool before transferring to a wire rack.
Notes
Make sure your butter is at room temperature for easier mixing. Chilling the dough helps maintain its shape while baking. Use colorful sprinkles for an extra festive touch.
