A festive and colorful sweet snack perfect for St. Patrick’s Day celebrations, combining Chex cereal, candy melts, and fun toppings.
Ingredients
- 4 cups Chex Rice Cereal
- 1 cup green candy melts
- 1/4 cup peanut butter
- 1/2 tbsp vegetable or canola oil
- 3/4 to 1 cup powdered sugar
- 1/4 cup M&M’s
- 1/4 cup Shamrock Sprinkles
- 1/4 cup Shamrock Marshmallows (from Lucky Charms Cereal)
Instructions
- In a microwave-safe bowl, combine green candy melts, peanut butter, and vegetable or canola oil.
- Microwave the mixture on HIGH for 30 seconds. Stir and then continue cooking in 15-second intervals until the mixture is smooth.
- Pour the Chex cereal into the bowl and mix until the cereal is well coated.
- Open a gallon-size zip lock bag, pour the cereal mixture inside, seal the bag, add the powdered sugar, and shake until well coated.
- Pour the coated cereal onto parchment or wax paper to set.
- Top with M&M’s, shamrock sprinkles, and shamrock marshmallows. Stir gently to combine.
- Store in an airtight container for up to a week.
