A delightful treat combining savory bacon with juicy chicken, all wrapped in a sweet and spicy coating, perfect for gatherings and family dinners.
Ingredients
- 2 1/4 lbs Boneless, Skinless Chicken Breasts (cut into 1 inch cubes)
- 1 lb Sliced Bacon (cut into thirds)
- Salt, to taste
- 2/3 cup Light Brown Sugar, firmly packed
- 1 Tbsp Chili Powder
- 1/8 tsp Cayenne Pepper (optional)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C) and line a large rimmed baking sheet with aluminum foil. Place a wire cooling rack on top and coat it with nonstick cooking spray.
- Season the chicken cubes lightly with salt. Wrap a piece of bacon around each chicken cube and secure it with a toothpick.
- In a small bowl, mix together the brown sugar, chili powder, and cayenne pepper. Roll each bacon-wrapped chicken piece in the sugar mixture.
- Arrange the pieces on the wire rack and bake for 30 to 35 minutes until the chicken is cooked through and the bacon is crisp.
- Let rest for 2 to 3 minutes before serving warm.
Notes
For extra flavor, marinate the chicken cubes in your favorite seasoning for a few hours before wrapping. Use toothpicks to secure the bacon tightly around the chicken.
