Description
Delicious vegan strawberry oat bars with a sweet strawberry filling sandwiched between a crumbly oat crust.
Ingredients
- 12 oz fresh strawberries, stemmed and sliced
- 0.25 cup maple syrup or agave
- 2 tablespoons cornstarch
- 2 teaspoons lemon juice
- 0.5 teaspoon vanilla extract
- 1.5 cups all purpose flour
- 1.5 cups large flake rolled oats
- 1 cup cold vegan butter
- 1 cup brown sugar
- 1 teaspoon baking powder
- 0.5 teaspoon salt
Instructions
- Preheat your oven to 350°F (180°C) and line the bottom of an 8 x 8 inch baking pan with parchment paper.
- For the strawberry filling, mix the strawberries, maple syrup, cornstarch, and lemon juice in a medium saucepan. Cook over medium heat for 3 to 5 minutes until it turns into a thin gel. Remove from heat, stir in vanilla extract, and set aside.
- For the oat mixture, combine the flour, oats, butter, sugar, baking powder, and salt in a large bowl. Mash the butter into the mixture until crumbly.
- To assemble, press half the oat mixture into the bottom of the pan. Spread the strawberry filling evenly on top, then sprinkle with the remaining oat mixture and lightly press down.
- Bake for 35 to 40 minutes until lightly browned. Let cool completely before slicing into bars.

Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
