Description

Delicious vegan strawberry oat bars with a sweet strawberry filling sandwiched between a crumbly oat crust.


Ingredients

  • 12 oz fresh strawberries, stemmed and sliced
  • 0.25 cup maple syrup or agave
  • 2 tablespoons cornstarch
  • 2 teaspoons lemon juice
  • 0.5 teaspoon vanilla extract
  • 1.5 cups all purpose flour
  • 1.5 cups large flake rolled oats
  • 1 cup cold vegan butter
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (180°C) and line the bottom of an 8 x 8 inch baking pan with parchment paper.
  2. For the strawberry filling, mix the strawberries, maple syrup, cornstarch, and lemon juice in a medium saucepan. Cook over medium heat for 3 to 5 minutes until it turns into a thin gel. Remove from heat, stir in vanilla extract, and set aside.
  3. For the oat mixture, combine the flour, oats, butter, sugar, baking powder, and salt in a large bowl. Mash the butter into the mixture until crumbly.
  4. To assemble, press half the oat mixture into the bottom of the pan. Spread the strawberry filling evenly on top, then sprinkle with the remaining oat mixture and lightly press down.
  5. Bake for 35 to 40 minutes until lightly browned. Let cool completely before slicing into bars.

Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
