Ingredients

  • 1 ½ lbs chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 hot peppers, chopped
  • 1 cup chicken stock
  • 1 cup coconut milk
  • 2 carrots, sliced
  • 1 bell pepper, chopped

Instructions

  1. Mix the chicken pieces with curry powder, allspice, salt, and black pepper. Let it marinate for at least 30 minutes.
  2. Heat the oil in a large pot over medium heat. Add the marinated chicken and brown on all sides.
  3. Add the onion, garlic, and ginger to the pot. Sauté until the onion is translucent.
  4. Stir in the hot peppers, chicken stock, and coconut milk. Bring to a simmer.
  5. Add the carrots and bell pepper. Cover and cook on low heat for about 30 minutes, or until the chicken is tender and cooked through.
  6. Adjust seasoning if needed, serve with rice or flatbread.

Notes

For extra flavor, marinate the chicken overnight. Adjust the heat level by using more or fewer hot peppers.
