A comforting and delicious white chicken chili with tender chicken, creamy white beans, and sweet corn. Perfect for any gathering!

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup heavy cream or sour cream
  • Chopped cilantro for garnish

Instructions

  1. Combine the shredded chicken, white beans, corn, diced green chilies, onion, garlic, chicken broth, cumin, chili powder, oregano, salt, and pepper in a slow cooker, stovetop pot, or instant pot.
  2. Cook on low for 6-8 hours or high for 3-4 hours in a slow cooker. If using a stovetop, simmer for about 30 minutes. For the instant pot, cook on high pressure for 15 minutes and then manually release.
  3. Stir in the heavy cream or sour cream just before serving.
  4. Garnish with chopped cilantro and serve warm.

Notes

You can use leftover rotisserie chicken for quicker preparation. Adjust the spice level by adding more chili powder or including jalapeños if you like it hot.
