A delicious and simple baked dish featuring rich feta cheese, fresh vegetables, and eggs, perfect for breakfast or brunch.

Ingredients

  • 200g Feta cheese
  • 4 large Eggs
  • 2 tablespoons Olive oil
  • 200g Cherry tomatoes, halved
  • 100g Fresh spinach
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon Oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Add a block of feta cheese in a baking dish and surround it with halved cherry tomatoes and fresh spinach.
  3. Drizzle olive oil over the top, then season with salt, pepper, and oregano.
  4. Create small wells in the mixture and crack an egg into each well.
  5. Bake in the oven for about 20 minutes, or until the eggs are set to your liking.
  6. Serve warm, and enjoy your Mediterranean-inspired baked feta eggs!

Notes

Serve with crusty bread or toast, and feel free to add fresh herbs for extra flavor. Store leftovers in an airtight container for up to 3 days.
