  • 1 pound Chicken Breast
  • 2 cups Mixed Vegetables
  • 2 cups Rice
  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet Chili Sauce
  • 2 tablespoons Sriracha

Instructions

  1. Start by cooking your rice according to the package instructions. While the rice cooks, chop the chicken into bite-sized pieces.
  2. Heat a pan over medium heat and add a bit of oil. Cook the chicken until it’s no longer pink inside, about 7-10 minutes.
  3. Add the mixed vegetables to the pan and stir-fry for 3-5 minutes until they are tender but still crisp.
  4. In a small bowl, mix the mayonnaise, sweet chili sauce, and Sriracha. Stir until well combined.
  5. Taste the sauce and adjust the spice level if needed.
  6. Once the chicken and vegetables are cooked, place the rice in bowls. Top the rice with the chicken and vegetables, then drizzle the sauce over everything.

Serve warm and garnish with green onions, sesame seeds, or extra Sriracha if desired.
