1/2 tsp chili powder
3/4 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp coconut sugar
1/2 tsp oregano
3/4 tsp salt
1/4 tsp black pepper
1/4 tsp dry mustard powder
1/8 tsp cayenne pepper
2 pork chops (center-cut, at least 1-inch thick)
2 1/2 tbsp extra virgin olive oil
Instructions
In a small bowl, mix together the chili powder, smoked paprika, onion powder, garlic powder, coconut sugar, oregano, salt, black pepper, dry mustard powder, and cayenne pepper.
Rub this spice mixture evenly over both sides of the pork chops.
Drizzle the olive oil over the pork chops and let them sit for about 15-30 minutes at room temperature.
Preheat your grill to medium-high heat.
Place the pork chops on the grill and cook for about 4-5 minutes on one side.
Flip the chops and cook for another 4-5 minutes or until the internal temperature reaches 145°F (63°C).
Once cooked, remove the chops from the grill and let them rest for about 5 minutes before serving.
Notes
Letting the pork chops rest before cutting helps keep the juices in. Adjust the spice levels to your preference.
