Buffalo Chicken and Rice Skillet

A one-pan meal that combines buffalo sauce with chicken and rice, perfect for busy weeknights.

Ingredients

  • 1 lb lean ground chicken breast
  • 1 cup cauliflower rice
  • 1 cup brown rice
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 onion, diced
  • 2 tbsp buffalo sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced onion, carrot, and celery to the skillet and sauté until softened.
  3. Add the ground chicken to the skillet, breaking it apart with a spatula, and cook until browned.
  4. Stir in the cauliflower rice, brown rice, buffalo sauce, garlic powder, onion powder, salt, and pepper.
  5. Cook for an additional 5-7 minutes until everything is heated through and well combined.
  6. Serve warm and enjoy!

Notes

Garnish with chopped green onions or cheese for extra flavor. Store in an airtight container for up to 3-4 days in the refrigerator.
