A delightful dish combining juicy roasted chicken with colorful vegetables, perfect for family dinners or meal prep.

  • 1 whole chicken
  • 4 potatoes, cubed
  • 2 bell peppers, cut into strips
  • 3 carrots, sliced
  • 1 tablespoon olive oil
  • 2 teaspoons Greek seasoning
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the whole chicken in a Bundt pan.
  3. Toss the potatoes, bell peppers, and carrots with olive oil, Greek seasoning, salt, and pepper in a bowl.
  4. Arrange the vegetables around the chicken in the Bundt pan.
  5. Roast in the preheated oven for about 90 minutes, or until the chicken is cooked through and the juices run clear.
  6. Remove from the oven and let it rest for a few minutes.
  7. Sprinkle fresh dill over the chicken and vegetables before serving.

Notes

For crispy skin, you can broil the chicken for a few minutes at the end of cooking. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months.
