Delicious and nutritious egg bites made with cottage cheese, packed with protein and customizable with your favorite veggies.

  • 6 eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (spinach, bell peppers, onions)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or oil.
  3. Whisk together the eggs, cottage cheese, salt, and pepper in a bowl.
  4. Stir in the shredded cheese and chopped vegetables.
  5. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  7. Allow to cool slightly before removing from the muffin tin.
  8. Enjoy them warm or let them cool and store for meal prep.

Notes

These egg bites can be customized with various vegetables or meats. Best stored in an airtight container in the fridge for up to 5 days, or frozen for longer storage.
