Delicious and nutritious cheesy stuffed bell peppers filled with ground beef, rice, and topped with gooey cheese.

  • 4 bell peppers
  • 1 lb lean ground beef
  • 1 cup cooked brown rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain the excess fat.
  4. Stir in the cooked brown rice, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Stuff the mixture into each bell pepper and place them in a baking dish.
  6. Top with shredded cheese.
  7. Bake for 25-30 minutes or until the peppers are tender.
  8. Serve hot and enjoy!

Notes

For a vegetarian version, substitute the meat with black beans or lentils. Feel free to add fresh herbs for garnish.
