Description

A simple and flavorful one-pan meal with ground beef, beans, corn, and cheese, perfect for busy weeknights.


Ingredients

  • 1 lb lean ground beef
  • 1 can beans (black or pinto), drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups ready rice (or cooked rice)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, green onions, cilantro


Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Stir in the taco seasoning and add the beans, corn, and ready rice. Mix well to combine.
  3. Cook for about 5-7 minutes, stirring occasionally, until everything is heated through.
  4. Sprinkle cheese over the top and cover until melted.
  5. Serve hot, garnished with optional toppings.

Notes
