A simple and flavorful one-pan meal with ground beef, beans, corn, and cheese, perfect for busy weeknights.
Ingredients
- 1 lb lean ground beef
- 1 can beans (black or pinto), drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups ready rice (or cooked rice)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- Salt and pepper to taste
- Optional toppings: sour cream, salsa, green onions, cilantro
Instructions
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Stir in the taco seasoning and add the beans, corn, and ready rice. Mix well to combine.
- Cook for about 5-7 minutes, stirring occasionally, until everything is heated through.
- Sprinkle cheese over the top and cover until melted.
- Serve hot, garnished with optional toppings.
Notes
Use lean ground beef for a lower fat content. Customize with your favorite toppings.
