Delicious Chicken Biryani with rich flavors, fragrant spices, and tender chicken served with basmati rice.

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 large onion, sliced
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit
  • 1/4 cup yogurt
  • 2-3 tablespoons biryani masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup mint leaves, chopped
  • 4 cups water
  • Salt to taste
  • Cooking oil or ghee

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 30 minutes.
  2. Heat oil or ghee in a large pot and fry sliced onions until golden brown.
  3. Add the chicken pieces and cook until lightly browned.
  4. Stir in tomatoes, green chilies, yogurt, biryani masala, turmeric, and salt. Cook until the chicken is tender.
  5. Bring water to a boil in another pot, add soaked rice, and cook until it’s 70% done. Drain the rice.
  6. Layer the partially cooked rice over the chicken mixture in the pot. Sprinkle garam masala, coriander, and mint leaves on top.
  7. Cover the pot with a tight lid and cook on low heat (dum) for about 20-25 minutes until the rice is fully cooked and fragrant.
  8. Serve hot with raita or salad.

Notes

Make sure to soak the basmati rice properly for fluffy grains. Use fresh herbs for the best flavor.
