A delightful dish featuring creamy Boursin cheese sauce that complements tender chicken breasts, perfect for weeknights or special occasions.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 ounces Boursin cheese, softened
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts to the skillet and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
  4. Reduce heat to medium. Add Boursin cheese, chicken broth, and heavy cream to the skillet.
  5. Whisk until the cheese is melted and the sauce is smooth.
  6. Stir in parsley and thyme.
  7. Return chicken breasts to the skillet and spoon sauce over the top.
  8. Simmer for 2-3 minutes, or until chicken is heated through.
  9. Serve immediately.

Notes

For added flavor, marinate the chicken in olive oil, garlic, and herbs for a couple of hours before cooking. You can customize the sauce by adding vegetables like spinach or mushrooms.
