A quick and healthy breakfast combining protein-packed eggs with fiber-rich chickpeas and flavorful sun-dried tomatoes.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 eggs
  • 2 tablespoons sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Heat olive oil in a frying pan over medium heat.
  2. Add chickpeas and sun-dried tomatoes to the pan, and sauté for 3-4 minutes until heated through.
  3. Create two small wells in the chickpea mixture and crack an egg into each well.
  4. Season with salt and pepper.
  5. Cover the pan and cook until the egg whites are set but the yolks are still runny, about 3-5 minutes.
  6. Serve warm and enjoy your protein-packed breakfast!

Notes

Rinse chickpeas well to remove excess sodium. Adjust cooking time based on desired egg doneness.
