  • 1 can coconut milk
  • 1 tbsp soy sauce (or tamari)
  • 1 tsp lime juice
  • 2 cloves garlic
  • 1 tsp ginger
  • 2 cups cooked rice
  • 1 tbsp vegetable oil (or coconut oil)
  • Salt and pepper to taste
  • Fresh cilantro or green onions

Instructions

  1. Cook the Rice: If you haven’t cooked the rice yet, start by cooking it according to package instructions. Set aside once done.
  2. Prep the Chicken: Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  3. Sauté the Chicken: In a large skillet, heat the vegetable oil over medium heat. Add the chicken and cook until golden brown, about 5-7 minutes.
  4. Add Aromatics: Add minced garlic and grated ginger to the skillet. Sauté for another minute until fragrant.
  5. Incorporate Coconut Milk: Pour the coconut milk into the skillet, followed by soy sauce and lime juice. Stir to combine.
  6. Simmer: Allow the mixture to simmer for about 10 minutes until the chicken is cooked through and the sauce has thickened slightly.
  7. Combine with Rice: Add the cooked rice to the skillet. Mix until the rice is well-coated with the coconut sauce.
  8. Serve: Garnish with fresh cilantro or green onions before serving.

Notes

You can add chili flakes or sriracha for an extra kick. Adding vegetables like bell peppers or spinach can increase the nutritional value.
