A refreshing and easy-to-make cold tortellini pasta salad packed with fresh vegetables, perfect for warm weather.

Ingredients

  • 8 oz tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Cook the tortellini according to package instructions, then drain and let cool.
  2. Combine the cooled tortellini, cherry tomatoes, cucumber, and red onion in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. If it absorbs too much dressing, add olive oil and vinegar before serving.
