A fresh and colorful corn salad featuring sweet corn and vibrant vegetables, perfect as a side or snack.

Ingredients

  • 4 cups corn kernels (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Combine the corn, cherry tomatoes, red bell pepper, red onion, and cilantro in a large bowl.
  2. Whisk together the olive oil, apple cider vinegar, garlic powder, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for later. Enjoy as a side dish or snack!

Notes

Best served fresh, but it can be refrigerated for up to 2 to 3 days. Keep dressing separate if storing leftovers.
