A comforting one-pot lasagna soup that delivers classic flavors without the fuss of layering.
Ingredients
- 2 teaspoons olive oil
- 1 pound Italian sausage or ground beef, or a mix
- 1 medium onion, diced
- 3 to 4 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- 1 pinch red pepper flakes, optional
- 1 can crushed tomatoes (28 ounces)
- 4 cups chicken or vegetable broth
- 8 broken lasagna noodles (about 6 to 7 ounces)
- 1 bay leaf
- 1 teaspoon sugar, optional
- Kosher salt and black pepper to taste
- 1 cup ricotta
- 1 cup shredded mozzarella
- 1/3 cup grated Parmesan
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium. Add sausage or beef and cook until browned with crispy edges. Season with a pinch of salt and pepper.
- Stir in onion and cook until soft and translucent. Add garlic and tomato paste and cook until fragrant and slightly darkened.
- Add Italian seasoning and red pepper flakes. Pour in crushed tomatoes and broth. Add bay leaf and sugar if needed. Bring to a steady simmer.
- Break lasagna noodles into bite-size pieces and drop them into the pot. Simmer for 12 to 15 minutes until noodles are al dente, stirring often.
- In a small bowl, mix ricotta, mozzarella, and Parmesan with salt and pepper.
- Ladle soup into bowls and top with the cheese mixture. Finish with fresh basil or parsley.
Notes
For extra flavor, add a Parmesan rind while simmering. Adjust thickness by simmering uncovered for a few minutes.
