A comforting one-pot lasagna soup that delivers classic flavors without the fuss of layering.

  • 2 teaspoons olive oil
  • 1 pound Italian sausage or ground beef, or a mix
  • 1 medium onion, diced
  • 3 to 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1 pinch red pepper flakes, optional
  • 1 can crushed tomatoes (28 ounces)
  • 4 cups chicken or vegetable broth
  • 8 broken lasagna noodles (about 6 to 7 ounces)
  • 1 bay leaf
  • 1 teaspoon sugar, optional
  • Kosher salt and black pepper to taste
  • 1 cup ricotta
  • 1 cup shredded mozzarella
  • 1/3 cup grated Parmesan
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium. Add sausage or beef and cook until browned with crispy edges. Season with a pinch of salt and pepper.
  2. Stir in onion and cook until soft and translucent. Add garlic and tomato paste and cook until fragrant and slightly darkened.
  3. Add Italian seasoning and red pepper flakes. Pour in crushed tomatoes and broth. Add bay leaf and sugar if needed. Bring to a steady simmer.
  4. Break lasagna noodles into bite-size pieces and drop them into the pot. Simmer for 12 to 15 minutes until noodles are al dente, stirring often.
  5. In a small bowl, mix ricotta, mozzarella, and Parmesan with salt and pepper.
  6. Ladle soup into bowls and top with the cheese mixture. Finish with fresh basil or parsley.

Notes

For extra flavor, add a Parmesan rind while simmering. Adjust thickness by simmering uncovered for a few minutes.
