A delightful and healthy pasta dish combining rich salmon and fresh spinach in a creamy sauce, perfect for family dinners or special occasions.

Ingredients

  • 8 oz pasta (fettuccine or linguine)
  • 2 salmon fillets
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, and add them to the skillet. Cook for about 4-5 minutes on each side or until fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, add garlic and sauté until fragrant.
  4. Add the fresh spinach and cook until wilted.
  5. Pour in the heavy cream and stir to combine, letting it come to a simmer.
  6. Add the cooked pasta to the cream sauce, tossing to coat.
  7. Flake the cooked salmon and fold it into the pasta.
  8. Serve hot, topped with grated Parmesan cheese if desired.

Notes

For more flavor, try adding lemon juice or zest to the sauce. You can also use frozen spinach if fresh is not available; just drain off extra moisture.
