  • 1 pound cooked chicken, shredded
  • 2 cups mixed fresh vegetables (like bell peppers, carrots, and cucumbers)
  • 1/4 cup chopped peanuts
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the crispy rice, shredded chicken, and mixed fresh vegetables.
  2. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, salt, and pepper until smooth.
