Description

A delicious and easy appetizer bringing together the classic flavors of a Reuben sandwich in a warm, creamy dip, perfect for parties or game day.


Ingredients

  • 8 oz Cream Cheese, softened and cubed
  • 1/2 cup Sour Cream
  • 1/2 cup Russian or Thousand Island Dressing
  • 1/2 lb Cooked Corned Beef, finely chopped
  • 1 cup Sauerkraut, thoroughly drained and squeezed dry
  • 2 cups Swiss Cheese, shredded
  • Cocktail Rye Bread slices (toasted)
  • Pumpernickel Bread cubes
  • Sturdy Bagel Chips or Pretzels


Instructions

  1. Prepare the sauerkraut by draining and squeezing out excess liquid.
  2. Lightly grease the inside of a slow cooker.
  3. Add the cream cheese, sour cream, dressing, corned beef, dry sauerkraut, and 1.5 cups of Swiss cheese to the slow cooker.
  4. Cook on LOW for 120 minutes or HIGH for 60 minutes.
  5. Stir the mixture once melted until smooth.
  6. Sprinkle the reserved Swiss cheese on top and cook for an additional 15 minutes until bubbly.
  7. Serve warm with toasted bread or bagel chips.

Notes

For a spicier version, add chopped jalapeños or hot sauce. You can use leftover corned beef or consider using low-fat cream cheese and sour cream for a healthier option.
