  • 6 cups cubed day-old bread or 4 cups thawed shredded hash browns
  • 10 large eggs
  • 1 and 3/4 cups milk or half-and-half
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Pinch of garlic powder
  • 1 pound cooked breakfast sausage, bacon, or diced ham
  • 2 cups shredded cheese (e.g., sharp cheddar, Gruyere, mozzarella)
  • Optional add-ins: sautéed onions, bell peppers, mushrooms, spinach, kale, cherry tomatoes, or roasted broccoli

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly toast the cubed bread if using.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  4. In a greased 9×13-inch baking dish, lay down the starch base (bread or hash browns).
  5. Scatter the cooked protein and any veggies over the base.
  6. Sprinkle most of the cheese over the top.
  7. Pour the egg mixture over the layered ingredients.
  8. Top with the remaining cheese.
  9. Bake on the middle rack for 45-55 minutes until center is set and top is browned.
  10. Let rest for 10 minutes before slicing and serving.

Notes

To make ahead, assemble up to 24 hours in advance and refrigerate. Let sit at room temperature for 20-30 minutes before baking.
