A delightful and easy dish combining tender chicken, flavorful rice, and creamy tzatziki sauce, perfect for busy weeknights.

Ingredients

  • 1 cup long-grain white rice
  • 1 ½ cups low-sodium chicken broth
  • 1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp paprika
  • 1 cup tzatziki sauce (store-bought or homemade)
  • ½ cup crumbled feta cheese
  • ½ cup chopped fresh parsley or dill (for garnish)
  • 1 medium cucumber, thinly sliced (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Spread uncooked rice evenly in the dish. Pour in chicken broth to fully submerge the rice.
  3. Layer chicken pieces over rice. Sprinkle with garlic powder, onion powder, oregano, and paprika.
  4. Spoon tzatziki sauce over the chicken and gently spread to coat.
  5. Cover tightly with foil and bake for 35–40 minutes, until chicken is cooked and rice is tender.
  6. If excess liquid remains, uncover and bake for an additional 5–10 minutes.
  7. Let rest for 5 minutes. Top with feta, parsley or dill, and cucumber slices before serving.

Notes

Use fresh ingredients for enhanced flavor. Feel free to add more spices or vegetables for more nutrients.
