A quick and easy crockpot recipe for teriyaki chicken that requires minimal prep time and delivers a delicious meal for busy weeknights.

  • 1 lb chicken breasts
  • 1 cup teriyaki sauce
  • 2 cups vegetables (like bell peppers, broccoli, and carrots)
  • Cooked rice or noodles (for serving)
  • Sesame seeds (optional for garnish)
  • Green onions (optional for garnish)

Instructions

  1. Place chicken breasts in the crockpot.
  2. Pour teriyaki sauce over the chicken.
  3. Add vegetables to the crockpot.
  4. Cover and cook on low for 240-360 minutes or high for 120-180 minutes.
  5. Once cooked, shred the chicken in the sauce.
  6. Serve over cooked rice or noodles.
  7. Garnish with sesame seeds and green onions if desired.

Notes

For a thicker sauce, mix in a cornstarch slurry during the last 30 minutes of cooking. Use any vegetables you have on hand; frozen mixed vegetables work well, too. Add red pepper flakes for a spicier kick.
