A quick and healthy twist on a classic dish, this Easy Baked Sweet and Sour Chicken is perfect for busy weeknights with crispy chicken and a tangy sauce.

Ingredients

  • 1 pound boneless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 1 cup sweet and sour sauce
  • 1 tablespoon vegetable oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix cornstarch, salt, and pepper. Coat chicken pieces in the mixture.
  3. Dip the coated chicken in the beaten egg, then roll in breadcrumbs.
  4. Place the chicken on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes or until golden brown.
  6. In a skillet, heat oil over medium heat and sauté bell pepper and onion until tender.
  7. Add sweet and sour sauce to the skillet and bring to a simmer.
  8. Toss baked chicken in the sauce mixture and serve warm.

Notes

For extra crunch, coat chicken pieces evenly with cornstarch. Use fresh vegetables for the best flavor. You can add crushed red pepper flakes for spice.
