Description
A quick and delicious nacho casserole layered with tortilla chips, seasoned beef, cheese, and salsa.
Ingredients
- 1 lb ground beef
- 1 can corn (drained)
- 4 cups tortilla chips
- 2 cups Colby cheese (shredded)
- 1 packet taco seasoning
- 1 cup salsa
- 1/2 cup sour cream (optional)
- Chopped green onions (for garnish, optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned; drain excess fat.
- Stir in taco seasoning and corn, cook for 2-3 minutes.
- In a greased baking dish, layer half of the tortilla chips, followed by half of the beef mixture and half of the cheese. Repeat the layers.
- Pour salsa over the top layer and sprinkle remaining cheese on top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve hot with sour cream and chopped green onions if desired.
Notes
For a milder dish, use less taco seasoning or a mild salsa. Drain the beef well to avoid a soggy casserole.
