Easy Nacho Casserole

A quick and delicious nacho casserole layered with tortilla chips, seasoned beef, cheese, and salsa.

Ingredients

  • 1 lb ground beef
  • 1 can corn (drained)
  • 4 cups tortilla chips
  • 2 cups Colby cheese (shredded)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1/2 cup sour cream (optional)
  • Chopped green onions (for garnish, optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned; drain excess fat.
  3. Stir in taco seasoning and corn, cook for 2-3 minutes.
  4. In a greased baking dish, layer half of the tortilla chips, followed by half of the beef mixture and half of the cheese. Repeat the layers.
  5. Pour salsa over the top layer and sprinkle remaining cheese on top.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Serve hot with sour cream and chopped green onions if desired.

Notes

For a milder dish, use less taco seasoning or a mild salsa. Drain the beef well to avoid a soggy casserole.
