A vibrant, quick, and satisfying Greek salad with tomatoes, cucumbers, olives, feta, and a zesty dressing that’s perfect for busy weeknights.
Ingredients
- 2 cups ripe cherry tomatoes, halved
- 1 large cucumber, chopped into half-moons
- 1 small red onion, thinly sliced
- 1 green bell pepper, sliced into strips
- 3/4 cup Kalamata olives, pitted
- 6 ounces feta, cut into cubes
- 2 to 3 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- Juice of 1/2 lemon
- 1 teaspoon dried oregano, plus more to taste
- Salt and freshly cracked black pepper
Instructions
- Add the tomatoes, cucumber, bell pepper, onion, and olives to a big bowl. Sprinkle with a pinch of salt.
- In a small jar, shake together olive oil, red wine vinegar, lemon juice, oregano, and black pepper. Taste and adjust seasoning.
- Pour the dressing over the veggies and toss gently until everything is lightly coated.
- Add the feta on top and sprinkle with more oregano and a touch of black pepper.
- Let it sit for 5 minutes before serving for flavors to mingle.
Notes
Use the best olive oil for the dressing for maximum flavor. You can customize with additional ingredients as desired.
