Greek Chicken Bowls are a healthy and flavorful meal featuring tender chicken, fresh vegetables, creamy feta cheese, and zesty tzatziki sauce. Customizable and perfect for meal prep.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Tzatziki sauce (store-bought or homemade)

Instructions

  1. Whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
  2. Place the chicken breasts in a zip-top bag or shallow dish, pour the marinade over them, and marinate for at least 30 minutes.
  3. Preheat your grill or skillet over medium-high heat, remove the chicken from the marinade, and discard the excess marinade.
  4. Grill or cook the chicken for about 6-7 minutes on each side until fully cooked and the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for a few minutes, then slice it into strips.
  6. Layer serving bowls with cooked quinoa or rice, sliced chicken, cherry tomatoes, cucumber, red onion, crumbled feta cheese, and chopped parsley.
  7. Top each bowl with a generous dollop of tzatziki sauce.

Notes

Serve warm and enjoy fresh. Store leftovers in an airtight container in the refrigerator for up to 3 days.
