Greek Chicken Casserole

A delicious and nutritious one-dish meal featuring tender chicken, fresh vegetables, and tangy feta cheese, perfect for family dinners or meal prep.

  • 4 chicken breasts, boneless and skinless
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup feta cheese, crumbled
  • 1/2 cup black olives, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat some olive oil in a large skillet over medium heat, then add the onion and garlic and sauté until softened.
  3. Add the chicken breasts and cook until golden brown on both sides, about 5-7 minutes.
  4. Combine the cooked rice or quinoa, tomatoes, bell peppers, olives, oregano, thyme, salt, and pepper in a large mixing bowl.
  5. Layer half of the rice mixture in the bottom of a baking dish.
  6. Place the cooked chicken breasts on top, then add the remaining rice mixture.
  7. Sprinkle the crumbled feta cheese on top.
  8. Drizzle with olive oil.
  9. Cover with foil and bake for 25-30 minutes.
  10. Remove the foil and bake for an additional 10 minutes until heated through and feta is slightly melted.
  11. Serve warm and enjoy!

Notes

Can be made ahead of time and stored in the fridge or frozen. Pair with a green salad or crusty bread.
