A delicious one-pan meal combining ground beef and sweet potatoes, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your choice)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and garlic, and sauté until translucent.
  3. Add ground beef and cook until browned.
  4. Stir in diced sweet potatoes, bell pepper, chili powder, cumin, salt, and pepper.
  5. Cover and cook for about 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
  6. Remove from heat and stir in shredded cheese until melted.
  7. Garnish with fresh cilantro if desired and serve warm.

Notes

For extra flavor, add hot sauce or a squeeze of lime juice before serving. Store leftovers in an airtight container for up to 3-4 days.
