A delicious and healthy High-Protein Chicken Ranch Quesadilla packed with flavor and nutrition, perfect for a busy day.

Ingredients

  • 1 low-carb tortilla
  • 1 cup cooked chicken breast
  • 1/2 cup Greek yogurt
  • 2 wedges Laughing Cow cheese
  • 1 tablespoon ranch seasoning
  • Cooking spray or oil

Instructions

  1. Heat a non-stick skillet over medium heat and spray with cooking spray or a little oil.
  2. Spread Greek yogurt and ranch seasoning over one side of the low-carb tortilla.
  3. Add cooked chicken and Laughing Cow cheese on top of the yogurt mixture.
  4. Fold the tortilla in half and place it in the skillet.
  5. Cook until golden brown and crispy on one side, then flip and cook the other side until the cheese is melted.
  6. Remove from heat, slice, and serve warm.

Notes

Serve warm, cut into wedges. Pairs well with salsa, guacamole, or a fresh salad. Add chopped veggies for extra crunch.
