A hearty and nutritious soup packed with protein, perfect for busy weeknights or cozy weekends.

Ingredients

  • 1 lb ground turkey or beef
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken or vegetable broth
  • 1 cup cream or sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Toppings: avocado, cilantro, lime wedges

Instructions

  1. Sauté the diced onion and garlic until translucent.
  2. Add the ground turkey or beef and cook until browned.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and broth.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  5. Stir in the cream or sour cream and cheese until melted and well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with avocado, cilantro, and lime wedges.

Notes

For a vegetarian version, replace the ground meat with additional beans or lentils and use vegetable broth instead.
