A delicious, satisfying meal prep option with tender steak and creamy mashed potatoes that is high in protein and low in calories.

Ingredients

  • Steak (sirloin or flank)
  • Garlic (minced)
  • Butter (light or reduced fat)
  • Potatoes (for mashing, preferably Yukon Gold)
  • Milk or cream (light, for the mashed potatoes)
  • Salt
  • Pepper
  • Olive oil (for cooking)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Season the steak with salt and pepper. Heat olive oil in a pan over medium-high heat. Cook the steak for 4-5 minutes on each side, or until desired doneness. Add minced garlic and butter in the last minute of cooking and baste the steak.
  2. While the steak is cooking, peel and chop the potatoes. Boil in salted water until tender. Drain and mash with milk or cream, salt, and pepper to taste.
  3. Let the steak rest for a few minutes after cooking, then slice it.
  4. Portion out the steak and mashed potatoes into meal prep containers. Garnish with fresh herbs if desired.
  5. Store in the fridge for a quick and easy meal during the week.

Notes

Make sure not to overcook the steak; it should be juicy and tender. Use Yukon Gold potatoes for the best creamy texture. Feel free to use other herbs, such as rosemary or thyme, to enhance the flavor. You can substitute butter with olive oil for a healthier fat option.
